Pomidorotta is a bruschetta pâté made with Italian dried tomatoes and red onion. The combination of these two ingredients, making up 80% of the product, sets it apart from more common dried tomato pâtés, where onion rarely takes a leading role: here it is instead the key element, in keeping with Tuscan cuisine, which uses it frequently in many preparations. The dried tomatoes used are Italian, dried both in the sun and in a controlled dehydrator, to ensure consistent production while maintaining the aromatic profile. The texture of the pâté is intentionally rustic, with visible pieces of vegetables not reduced to a velvety cream. It is perfect spread on bruschetta and warm crostini, as a dressing for short pasta or ravioli, for filling rustic sandwiches and savory pies, or as a base for appetizers paired with fresh cheeses.
