Shipments leave from Monday to Wednesday to avoid weekend storage delays.

Peel and cut the potatoes into chunks.
Parboil the potatoes in salted water until tender, then drain them.
Season the potatoes with salt, oil, pepper and herbs to taste.
Roll out the puff pastry in a baking tray and prick the base with a fork.
