
“Salad” savory tart with homemade dough
A quick savory tart without using store-bought puff pastry: a homemade dough base and a filling made with lettuce (or escarole/radicchio), cured pork loin and spreadable cheese. Ideal for a dinner ready in no time.
Ingredients
- For the homemade dough:
- 00 flour
100100 - Water
5050 - Extra virgin olive oil
1010 - Saltq.b.
- For the “salad” tart:
- Head of lettuce (or escarole/radicchio) with the stem removed
11 - Cured pork loin
4040 - Spreadable cheese
100100 - Parmesan (for sprinkling)q.b.
Preparation

Prepare the homemade dough: in a bowl combine the flour, water, extra virgin olive oil and a pinch of salt. Knead until you obtain a smooth and homogeneous dough. Wrap in cling film and let rest for 10-15 minutes.

Roll out the homemade dough on a floured surface forming a disc large enough to line a baking tray.

Prepare the filling: wash and dry the lettuce or escarole/radicchio and roughly chop it. Mix 70g of spreadable cheese with the lettuce and spread over the rolled-out dough base.

Add the sliced cured pork loin on top of the filling.

Fold the edges of the dough inward (or cover with an additional dough disc if preferred). Spread the remaining 30g of spreadable cheese over the surface and sprinkle with Parmesan to taste.

Bake in a preheated oven at 180°C for about 20-25 minutes, or until the dough is golden brown.

Remove from the oven, let cool slightly, cut and serve.
